✌🏼 If you too have looked the same as Victoria Justice < / strong> when we asked you how to make champagne, this article is for you!

In our previous article , we have shared with you what the job of the vine throughout the year. Now that you have understood everything about the profession of winegrower, let's move on to that of the winegrower! In other words, how do you create champagne from grapes?

🍇 After pressing the grapes harvested in September during the harvest, the juices (called "" "musts" ") are put in vats.

🥃 Alcoholic fermentation

Yeast and sugar are added to it, thus creating "" still wines "" , that is to say without bubbles.

💍 The assembly

The winemaker takes over to create a true marriage between several still wines from different vintages and from different years. This step will give character to the champagne and the bubbles are not yet present ...

✨ The draw

This term is used for the bottling of the beverage! A liqueur is added to the wine before corking the bottle with a metal cap and will trigger the second fermentation called "" prize de mousse "" . The wine will gradually become sparkling 🍾!

⏳ Aging

For a minimum of 15 months, the bottles will be "" put on slats "" , ie placed horizontally in the cellar at 10 ° C. For vintage vintages, the legislation requires 3 years of aging.

🌪 Riddling

When the prize de mousse is finished, the bottles will be gradually turned and finish vertically so that the deposit of the yeasts added previously, called "" lees "" , end up in the neck of the bottles.

❄️ Disgorging

The neck of the bottle will be immersed in a -25 ° solution to form an ice cube which will trap the lees. It will be expelled by the pressure of the sparkling wine.

🌡 The dosage

During disgorging, the vacuum created in the bottle will be filled with a new liquor called "" expedition "" composed of reserve wine (from the previous harvest) and sugar. It is the dosage of this liquor that will characterize whether the champagne will be called "" Plain "" (0g), "" Extra-Brut "", "" Brut "", "" Extra-Sec "", "" Sec " "," "Demi-sec" "or" "Doux" "(50g).

🎀 The dressing

The bottles are then closed with a cork stopper, "" a muselet "" (twisted wire), "" the cap "" , as well as "" the cap "" (aluminum part which closes and certifies the champagne). All that's missing is the label, the back label and can leave the farm to delight your taste buds!

You have no more excuses to make your culture sparkle in the evening 💃🏻 and taste it with delicacy and attention 🥂
